Steering Lock Stops Angle

Bike is fitted with adjustable steering lock stops.

Is there desired range of movement racers tends to use or is it a personal preference.

Only asking as it looks as though the previous owner had it set to give more turn angle to right than left which I thought was weird.

If they are the ones that clamp on the forks, I find them easy to move by accident. Utterly useless.
The ones to have the ones which mount to the frame.

Benefits, they stop the 2D pot sensor getting hit...if you have one. They limit the twist in a crash. Under normal conditions without a 2D sensor to protect they are just not needed.
