I’ve started getting the engine light come on at the track and stay on and having plugged it in to check diagnostics it’s O2 sensor issues. I’ve read various threads on this and seems like many people have had the same. Is there now way to delete them without having the ECU flashed? I’d like to just put a decat pipe on to do away with the cat and then delete the sensors. I’ll get a servo delete also and hopefully job done?!?
 
Not that I'm aware of. There are plenty on eBay for sale. It's not clear if they fail or just get fouled.
I'd try a overnight bath in petrol or some form of oxygen sensor & catalytic converter cleaner. Blasting it off with brake cleaner before refitting.
If you're posh and have an ultrasonic cleaning bath that would be even better. At all times keep the wires out of the cleaner.
