I spent a day and a half in the Pyrennes in September, its all good tbh. Bit like shooting fish in a barrel as far as the roads are concerned, and the scenery is epic everywhere I went. Cant comment on accommodation, the hotel we stayed at was crap.

Just pick the twisty looking N roads that go across the backbone of the mountain range and you wont go far wrong.
 
Also worth mentioning that the place is full of ski resorts in the winter, so you may need to take that into account with your dates (i.e. roads closed due to snowfall and ice);.
