There is Anti-stoppie. Which is separate. You don't know if he's switched off the ABS for the purposes of the video...he's probably in USER mode which deactivates it.

Abs is designed to maximise braking force without loss of traction. If there's enough front tyre grip to stop it slipping/sliding then the abs won't activate. I think you might be confusing abs with traction control, although linked, do different things.
 
Race ABS

Even with Race ABS on you can still lift the rear wheel under heavy braking on track. With it off you can easily lift the rear under braking or do so intentionally.
