On the 2019, if you drop the pressures below what it 'thinks' it acceptable, it throws a huge wobbly with errors everywhere taking up the entire dash screen and red flashing lights. This can be handy if you wanted to take the bike on track or change brand of tyres which recommend different pressures.

Is there really no way to disable the tyre warnings or at least reset the 'correct' pressures without taking the bike to a dealer? (i assume they can disable it or something).

It's a bit of an oversight...
 
Tyre Pressure Monitoring (RDC)

According to the Owner’s Manual (p.78) you can set the minimum tyre pressure via the dash, or turn off the pressure warning, so it should be fine for track use.
