Despite giving the front discs a good clean, the brakes still feel quite different. Lever is nowhere near the bar, but braking feels 90% as effective compared to before they were changed from the original OEM pads.

Spongy sounds like air in system or old fluid with moisture in it. Worth changing the fluid & bleeding the system. Fluid should be changed at least every 2 years (road use) as it absorbs moisture (which vaporises when hot causing sponginess).
